Ingredients:
2 ½ cups cooked and shredded chicken
1 cup sweet corn kernels
1 (15 oz) can black beans, drained and rinsed
1 cup salsa (mild or spicy, your choice)
1 cup sour cream
10 oz pasta (penne, rotini, or shells)
2 tbsp taco seasoning
2 cups Mexican cheese blend
Directions:
1. Preheat oven to 350°F (175°C).
2. Cook pasta in boiling water, 2 minutes short of package instructions. Drain and set aside.
3. In a large mixing bowl, combine sour cream, salsa, and taco seasoning.
4. Stir in the shredded chicken, corn, black beans, and 1 cup of cheese until well mixed.
