Slow Cooker White Chicken Chili

Ingredients:
1 pound boneless, skinless chicken breasts or thighs
2 1/2 cups low-sodium chicken broth
15 ounces corn, drained & rinsed
15 ounces white beans (cannellini or great northern), drained & rinsed
1/3 cup onion, diced
1 bell pepper, diced
4 ounces diced green chiles
2 garlic cloves, minced
1 tablespoon chili powder
1 teaspoon salt (or more, to taste)
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon oregano
1/4 teaspoon black pepper
Directions:
1. Prep the ingredients: Add chicken, broth, beans, corn, onion, bell pepper, green chiles, garlic, and spices to your slow cooker. Stir to combine.
2. Cook low and slow: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until chicken is tender.
3. Shred the chicken: Remove the chicken, shred with two forks, and return it to the pot. Stir well.
