    Spinach Chicken Casserole with Cream Cheese & Mozzarella

    Looking for a creamy chicken casserole recipe that’s both comforting and loaded with flavor? This Spinach Chicken Casserole with Cream Cheese and Mozzarella is the ultimate weeknight dinner idea. Juicy chicken, tender spinach, and a rich cream cheese mixture come together under a blanket of gooey mozzarella and Parmesan cheese. Perfect for family dinners, meal prep, or a crowd-pleasing potluck dish!

     

    Ingredients:

    For the Chicken:

    3 boneless, skinless chicken breasts (about 1.5 lbs)

    1 tablespoon olive oil

    1 teaspoon garlic powder

    1 teaspoon onion powder

    1 teaspoon smoked paprika

    Salt and black pepper, to taste

    For the Creamy Spinach Mixture:

    2 tablespoons unsalted butter

    3 garlic cloves, minced

    10 oz fresh spinach (or 1 package frozen spinach, thawed and drained)

    8 oz cream cheese, softened

    1/2 cup sour cream

    1/2 cup grated Parmesan cheese

    1/4 teaspoon ground nutmeg

    1/2 teaspoon crushed red pepper flakes (optional, for a kick)

    For the Topping:

    1 1/2 cups shredded mozzarella cheese

    1/4 cup grated Parmesan cheese

    Optional: 1/2 cup seasoned breadcrumbs for a crunchy topping

     

    Directions:

    1. Preheat the Oven Set oven to 375°F (190°C). Grease a 9×13-inch baking dish.

    2. Season the Chicken Mix olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Rub over chicken breasts and place them in the baking dish.

    3. Bake the Chicken Cook for 25–30 minutes until fully cooked. Let cool slightly, then shred into bite-sized pieces.

    4. Prepare the Creamy Spinach Mixture In a skillet, melt butter over medium heat. Add garlic and cook 1 minute. Stir in spinach until wilted (or heated through if frozen). Remove from heat.

    5. Mix the Filling In a bowl, combine cream cheese, sour cream, Parmesan, nutmeg, and red pepper flakes. Stir in spinach and shredded chicken until creamy and well blended.

    6. Assemble the Casserole Spread chicken and spinach mixture evenly in the baking dish. Top with mozzarella, extra Parmesan, and breadcrumbs if using.

    7. Bake Until Golden Return to oven and bake 20–25 minutes, until cheese is melted and bubbly.

    8. Serve & Enjoy – Let cool slightly before slicing. Serve with a fresh side salad, garlic bread, or roasted vegetables for a complete dinner.
