This easy chicken fajita casserole recipe is the ultimate Mexican-inspired comfort food! Juicy chicken breast, colorful bell peppers, onions, smoky fajita seasoning, creamy sour cream, and gooey melted cheese come together in one delicious baked dish. Ingredients:

1 ½ lbs boneless skinless chicken breasts, cut into bite-sized pieces

3 bell peppers (red, yellow, green), sliced

1 large onion, sliced

2 tbsp olive oil

2 cloves garlic, minced

2 tsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

½ tsp dried oregano

½ tsp salt

¼ tsp black pepper

1 cup sour cream

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

¼ cup chopped fresh cilantro (optional garnish)

 

Directions:

1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

2. In a skillet, cook chicken in olive oil until lightly browned.

3. Add garlic, bell peppers, and onion. Sauté until softened.

4. Stir in fajita seasoning: chili powder, cumin, paprika, oregano, salt & pepper.

5. Mix in sour cream, half the cheddar, and half the Monterey Jack until creamy.

6. Transfer to baking dish. Top with remaining cheeses.

7. Bake 20–25 minutes, until bubbly and golden.

8. Garnish with cilantro. Serve hot with rice, tortillas, or salad.
