    Garlic Parmesan Chicken Meatloaves with Creamy Mushroom Sauce

These Garlic Parmesan Chicken Meatloaves with Mushrooms are juicy, cheesy, and baked to perfection in a rich, creamy mushroom sauce. Perfect for weeknight dinners, meal prep, or family gatherings, this dish is a lighter twist on traditional meatloaf made with lean ground chicken and packed with savory garlic and Parmesan flavor!

    Ingredients (Serves 4–6)

    1 lb ground chicken

    ½ cup breadcrumbs

    ¼ cup grated Parmesan cheese

    ¼ cup milk

    1 large egg

    2 cloves garlic, minced

    ½ tsp Italian seasoning

    Salt and black pepper, to taste

    1 tbsp olive oil

    1 cup fresh mushrooms, sliced

    ¼ cup chicken broth (or water)

    ¼ cup heavy cream

    ¼ cup grated mozzarella cheese (optional, for topping)

    Fresh parsley, chopped (for garnish)

     

    Instructions:

    1. Prep the Oven: Preheat oven to 375°F (190°C). Grease a baking dish or line with parchment paper.

    2. Make the Meatloaf Mixture: In a large bowl, mix ground chicken, breadcrumbs, Parmesan cheese, milk, egg, garlic, Italian seasoning, salt, and pepper until combined.

    3. Shape Meatloaves: Form into 4–6 mini chicken meatloaves and place in the prepared baking dish.

    4. Cook Mushrooms: In a skillet, heat olive oil over medium heat. Add sliced mushrooms and sauté for 4–5 minutes until tender.

    5. Make Sauce: Add chicken broth and heavy cream to the mushrooms. Stir and simmer 2–3 minutes until slightly thickened.

    6. Bake Meatloaves: Pour the creamy mushroom sauce over the chicken meatloaves. Bake 25–30 minutes, or until meatloaves reach an internal temperature of 165°F (74°C).

    7. Add Cheese (Optional): Sprinkle mozzarella on top during the last 5 minutes of baking and let it melt.

    8. Serve & Garnish: Remove from the oven, garnish with parsley, and serve warm with mashed potatoes, pasta, or a fresh salad.
