    Hearty Green Split Pea Soup Recipe

    Hearty Green Split Pea Soup Recipe

    Nothing beats a warm, nutritious bowl of green split pea soup on a chilly day! This easy homemade split pea soup is packed with vegetables, flavorful herbs, and protein-rich split peas. Perfect for meal prep, weeknight dinners, or a cozy night in.

    Ingredients:

    2 tbsp extra virgin olive oil

    2 large carrots, chopped

    1 large onion, chopped

    2 stalks celery, chopped

    4 cloves garlic, grated

    1½ tsp cumin

    6 cups vegetable broth (start with 4 cups and add more as needed)

    2 cups dried green split peas

    1 bay leaf

    1 tsp dried oregano

    ½ tsp dried thyme

    1 tsp salt (or to taste)

    ½ tsp black pepper

    ¾ lb potatoes, peeled and diced (optional)

    5 oz spinach (optional)

    Directions:

    1. In a large pot, heat olive oil over medium heat. Add carrots, onion, and celery. Cook for 5 minutes, stirring often, until softened.

    2. Stir in grated garlic and cumin. Cook 1 more minute until fragrant.

    3. Pour in vegetable broth, then add split peas, bay leaf, oregano, thyme, salt, and pepper. Stir well.

    4. Cover and bring to a boil. Reduce heat to medium-low and simmer for 30–45 minutes, until split peas are tender. Taste to check doneness.

    5. Add diced potatoes 10 minutes after split peas start cooking.

    6. Use an immersion blender to blend 2–3 cups of the soup, then return it to the pot for a creamy texture.

    7. Add more salt, pepper, or broth as needed.

    8. Garnish with fresh thyme, drizzle of olive oil, and serve with warm, crusty bread for ultimate comfort.

     

    Tips for the Best Split Pea Soup:

    Add smoked paprika or a splash of lemon juice for extra flavor.

    Use fresh herbs like parsley or thyme for garnish.

    Store leftovers in the fridge for up to 5 days or freeze for later.
