INGREDIENTS:
2 tbsp olive oil
1 lb (450g) boneless skinless chicken thighs, cut into chunks
1 medium onion, diced
2 cloves garlic, minced
2 carrots, peeled & sliced
2 potatoes, peeled & diced
1 cup celery, chopped
1 cup green beans, chopped
1 zucchini, diced
4 cups chicken broth
1 cup water
1 tsp dried thyme
1 tsp dried rosemary
Salt & pepper, to taste
2 tbsp fresh parsley, chopped (for garnish)
INSTRUCTIONS:
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chicken chunks and cook for 5–7 minutes, until lightly browned. Remove and set aside.
In the same pot, sauté the diced onion and minced garlic for about 3 minutes, until fragrant.
Add the carrots, potatoes, celery, green beans, and zucchini. Stir to combine.
Pour in the chicken broth and water. Season with thyme, rosemary, salt, and pepper. Bring to a gentle boil.
Reduce heat, cover, and let the stew simmer for 30–35 minutes, or until the vegetables are tender.
Return the cooked chicken to the pot and cook for an additional 5 minutes, until heated through.
Taste and adjust the seasoning if needed. Finish with a sprinkle of fresh parsley. Serve hot.
