    Creamy Chicken and Mushroom Casserole

    Looking for the ultimate creamy chicken casserole that’s loaded with tender chicken, savory mushrooms, and a rich homemade sauce? This easy chicken and mushroom casserole is the perfect comfort food dinner that the whole family will love! It’s made with simple ingredients and bakes to perfection in just 30 minutes ideal for a weeknight meal or make-ahead freezer casserole.

     

    Ingredients:

    For the Chicken & Mushrooms

    2½ lbs chicken breasts (4–5 large), cut into 1-inch thick strips

    1½ tsp sea salt, plus more to taste

    ¼ tsp black pepper, plus more to taste

    1 cup all-purpose flour (for coating the chicken)

    6 Tbsp olive oil, divided

    1 pound white mushrooms, thickly sliced

    1 medium onion, finely diced

    3 garlic cloves, minced

    For the Creamy Casserole Sauce

    3 Tbsp unsalted butter

    3 Tbsp all-purpose flour

    1½ cups chicken broth

    1 Tbsp lemon juice

    1 cup half and half (or ½ cup milk + ½ cup heavy cream)

     

    Instructions:

    1. Preheat oven to 350°F (175°C).

    2. Season chicken with sea salt and black pepper. Dredge chicken evenly in flour to lightly coat all sides.

    3. In a large skillet, heat 3 Tbsp olive oil over medium heat. Add chicken strips in a single layer and cook for 4–5 minutes per side, until golden brown. Transfer cooked chicken to a casserole baking dish.

    4. Add the remaining 3 Tbsp olive oil to the same skillet. Sauté mushrooms for about 5 minutes, until golden and softened. Remove mushrooms and set aside.

    5. Add diced onion and minced garlic to the skillet and cook for 2–3 minutes, until fragrant and tender.

    6. For the sauce, melt butter in the skillet. Stir in flour to create a roux and cook for 1–2 minutes.

    7. Slowly pour in chicken broth, whisking continually to prevent lumps. Stir in lemon juice and half and half, then simmer until the sauce thickens.

    8. Return the sautéed mushrooms to the skillet and coat them in the creamy sauce.

    9. Pour the mushroom sauce evenly over the chicken in the baking dish.

    10. Bake uncovered for 25–30 minutes, until the chicken is fully cooked and the sauce is hot and bubbling.

     

    Serve immediately as a hearty family-style dinner perfect with mashed potatoes, rice, or crusty bread!
