    Slow Cooker Coconut Lime Chicken Curry

    Slow Cooker Coconut Lime Chicken Curry

    Looking for a flavor-packed, healthy chicken dinner that’s both easy and slow cooker-friendly? This Zesty Coconut Lime Chicken Curry is a creamy, dairy-free curry loaded with bold spices, citrusy zing, and tender chunks of chicken perfect for a comforting weeknight meal. Serve it over steamed jasmine rice for a satisfying, gluten-free dinner that’s sure to impress!

     

    Ingredients:

    1.5 lbs boneless skinless chicken thighs or breasts, cut into chunks

    1 medium onion, finely chopped

    3 garlic cloves, minced

    1 tablespoon fresh ginger, grated

    1 red bell pepper, sliced

    1 cup full-fat coconut milk (for a rich, creamy base)

    1/4 cup chicken broth

    Juice and zest of 2 limes (for that tangy, tropical flavor)

    2 tablespoons red curry paste

    1 tablespoon fish sauce (optional, for umami depth)

    1 teaspoon ground turmeric

    1 teaspoon ground cumin

    Salt and black pepper, to taste

    1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

    Fresh cilantro and lime wedges, for garnish

    Cooked jasmine rice, for serving

     

    directions:

    1. In your slow cooker, add chicken pieces, onion, garlic, ginger, red bell pepper, coconut milk, chicken broth, lime juice and zest, curry paste, fish sauce (if using), turmeric, cumin, salt, and pepper.

    2. Stir gently to combine everything evenly.

    3. Cook on LOW for 6–7 hours or

    HIGH for 3–4 hours, until chicken is tender and bursting with flavor.

     

    4. For a thicker curry, stir in the cornstarch slurry during the last 30 minutes of cooking.

    5. Season to taste and balance with more lime juice if desired.

    6. Spoon the curry over a bed of fluffy jasmine rice, and top with fresh cilantro and lime wedges.

     

    Tips & Variations:

    Use chicken thighs for extra tenderness and flavor.

    Make it spicier with sliced chili or extra red curry paste.

    Add spinach or kale during the last 15 minutes for added greens.
