    Cheesy Street Corn Party Dip

    Looking for the best cheesy corn dip for your next party or potluck? This Mexican-inspired street corn dip is creamy, spicy, and loaded with flavor! With sweet corn, jalapeños, gooey cheese, and a kick of lime, this easy hot corn dip is oven-baked to golden perfection. Perfect with tortilla chips or veggie sticks, it’s a crowd-pleasing appetizer for game day, barbecues, or holidays!

     

    Ingredients:

    1 (8 oz) block cream cheese, softened

    1/3 cup sour cream

    1/4 cup mayonnaise

    Juice of 1 lime

    1 tsp chili powder

    Kosher salt, to taste

    2 (15 oz) cans corn kernels, drained

    1 jalapeño, finely chopped (remove seeds for less heat)

    2 scallions, finely chopped

    2 garlic cloves, minced

    1/4 cup fresh chopped cilantro, plus more for topping

    1/4 cup crumbled feta cheese

    1 1/4 cups shredded Monterey Jack cheese, divided

    Hot sauce (optional)

    Tortilla chips or veggies for dipping

     

    Instructions:

    1. Preheat your oven to 350°F (175°C).

    2. In a large bowl, mix cream cheese, sour cream, mayo, lime juice, chili powder, and salt until smooth.

    3. Fold in the corn, chopped jalapeño, scallions, garlic, cilantro, feta, and 1 cup of Monterey Jack cheese.

    4. Spread the mixture into a greased baking dish. Top with the remaining 1/4 cup Monterey Jack cheese.

    5. Bake for 25–30 minutes, or until bubbly and golden on top.

    6. Garnish with more cilantro and a drizzle of hot sauce. Serve warm with tortilla chips or veggie sticks!
