Shrimp Avocado Boats

Ingredients (Serves 4)
4 ripe avocados, halved and pitted
1 lb (450g) medium shrimp, peeled and deveined
1 tbsp olive oil
2 cloves garlic, minced
1 tsp chili powder (or smoked paprika for a smoky twist)
Zest & juice of 1 lime
Salt & pepper, to taste
2 tbsp chopped fresh cilantro (plus more for garnish)
2 tbsp Greek yogurt or sour cream (for optional drizzle)
Instructions
1. Season the Shrimp:
In a mixing bowl, combine shrimp with garlic, chili powder, lime zest, salt, and pepper. Toss well.
2. Cook the Shrimp:
Heat olive oil in a skillet over medium-high heat. Sauté shrimp for 2 minutes per side or until pink and cooked through. Stir in lime juice and chopped cilantro. Remove from heat.
3. Prep the Avocados:
Place avocado halves on a serving platter with the hollow side facing up.
4. Assemble the Boats:
Spoon the cooked shrimp mixture into each avocado half. Press gently so the filling stays in place.
5. Add Toppings & Serve:
Drizzle with Greek yogurt or sour cream if desired. Garnish with extra cilantro and a sprinkle of chili powder. Serve fresh!
