1 tbsp olive oil

1 lb Italian sausage (mild or spicy, casings removed)

1 medium onion, finely diced

4 cups low-sodium chicken broth

1 cup heavy cream

1½ cups fresh baby spinach

1 cup freshly grated Parmesan cheese

1 tsp dried oregano
