Quick & Easy Southwest Chicken Salad Recipe

Ingredients:
1 lb boneless, skinless chicken breasts, cooked & shredded
1 can (15 oz) black beans, drained & rinsed
1 cup corn kernels (fresh or frozen)
1 red bell pepper, diced
1/2 red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 ripe avocado, diced
1/2 cup cherry tomatoes, halved
1/4 cup sour cream
1/4 cup salsa
1 tbsp lime juice
1 tsp chili powder
Salt & black pepper to taste
Lettuce leaves for serving
Directions:
Cook & Shred the Chicken:
Pan-cook chicken breasts over medium heat until golden and cooked through. Let cool, then shred.
Build the Salad Base:
In a large bowl, mix the shredded chicken, black beans, corn, bell pepper, red onion, cilantro, avocado, and tomatoes.
Make the Creamy Southwest Dressing:
Whisk together sour cream, salsa, lime juice, chili powder, salt, and pepper until smooth.
Toss It All Together:
Pour the dressing over the salad and toss until everything is well coated.
