    Cheesy Hamburger Rice Casserole Recipe

    Looking for an easy ground beef casserole recipe that’s hearty, cheesy, and kid-friendly? This Cheesy Hamburger Rice Casserole is the perfect one-pan dinner idea! Made with savory ground beef, fluffy white rice, melty cheddar and mozzarella cheese, and flavorful seasonings, it’s the ultimate comfort food casserole perfect for weeknights or potlucks.

     

    Ingredients:

    1 lb ground beef (lean)

    1 medium onion, chopped

    2 cloves garlic, minced

    1 cup uncooked white rice

    2 cups beef broth

    1 can (14.5 oz) diced tomatoes, undrained

    1 tsp paprika

    1 tsp dried oregano

    Salt and black pepper, to taste

    1 cup shredded cheddar cheese

    ½ cup shredded mozzarella cheese

     

    Instructions:

    1. Preheat Oven:
    Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch casserole dish with nonstick spray.

    2. Brown the Ground Beef:
    In a large skillet over medium heat, cook the ground beef with the chopped onion and garlic until the meat is browned and no longer pink. Drain excess fat.

    3. Mix Casserole Base:
    Stir in uncooked white rice, beef broth, diced tomatoes (with juice), paprika, oregano, salt, and pepper. Combine everything well.

    4. Assemble and Bake:
    Pour the mixture into the prepared baking dish and spread evenly. Cover with foil and bake for 25–30 minutes, or until the rice is tender and has absorbed the liquid.

    5. Add the Cheese:
    Remove foil and sprinkle cheddar and mozzarella cheese over the top. Return to the oven uncovered for 10–15 minutes, until the cheese is fully melted and bubbly.

    6. Serve & Enjoy:
    Let the casserole sit for 5 minutes before serving. Garnish with fresh parsley if desired. Serve warm!
