    Creamy Garlic Chicken with Spinach, Mushrooms & Baby Potatoes

    Looking for the perfect easy chicken dinner recipe that’s creamy, comforting, and packed with flavor? This Creamy Garlic Chicken with Spinach and Potatoes is a one-pan meal that delivers everything you love in a cozy, satisfying dish. Juicy chicken thighs (or breasts), tender baby potatoes, earthy mushrooms, and fresh spinach come together in a rich garlic cream sauce that’s low-carb and keto-friendly too!

    Ingredients:

    For the Chicken:

    4 boneless, skinless chicken thighs or breasts

    1 tbsp olive oil

    1 tsp garlic powder

    1 tsp paprika

    Salt and black pepper, to taste

    For the Creamy Garlic Sauce:

    2 tbsp butter

    2 cups fresh baby spinach, chopped

    1 cup mushrooms, sliced

    1 cup baby potatoes, halved and boiled until tender

    2 garlic cloves, minced

    ½ cup low-sodium chicken broth

    ½ cup heavy cream

    1 tsp Dijon mustard

    Salt and pepper, to taste

    1 tbsp fresh parsley, chopped (for garnish)

     

    Instructions:

    1. Season the Chicken: Coat chicken with garlic powder, paprika, salt, and black pepper.

    2. Sear: In a large skillet, heat olive oil over medium heat. Sear the chicken for 4–5 minutes per side until golden. Remove and set aside.

    3. Sauté Veggies: In the same skillet, melt butter. Add garlic and mushrooms, cooking for 2–3 minutes until softened.

    4. Create the Cream Sauce: Add chicken broth, heavy cream, and Dijon mustard. Stir well and simmer for 3–4 minutes until thickened slightly.

    5. Combine with Veggies: Stir in the boiled potatoes and spinach. Let them soak up the creamy goodness.

    6. Finish with Chicken: Return the chicken to the skillet. Spoon sauce over the top and simmer for 8–10 minutes until fully cooked.

    7. Serve & Garnish: Top with chopped parsley and serve with crusty bread or a green salad.
