Slow Cooker Cabbage Roll Soup

Ingredients:
1 lb ground beef
1 onion, chopped
3 cups cabbage, chopped
1 cup green beans, halved
1 cup celery, chopped
1/2 bell pepper, chopped
1 (796ml) can diced tomatoes
1 (156ml) can tomato paste
1 tsp Italian seasoning
3 cloves garlic, minced
3/4 cup broth (vegetable, beef, or chicken – about 900ml)
1 cup uncooked minute rice
Salt & pepper to taste
Instructions:
Brown the Beef
In a skillet over medium heat, cook the ground beef until browned and fully cooked. Drain any excess fat and transfer to your slow cooker.
Add the Veggies & Liquids
Add onion, cabbage, green beans, celery, and bell pepper to the slow cooker. Stir in the diced tomatoes, tomato paste, and broth of your choice.
Season the Soup
Add garlic, Italian seasoning, salt, and pepper. Stir well to combine all ingredients.
Slow Cook to Perfection
Cover and cook on high for 4 hours or low for 7–8 hours, allowing the flavors to meld and the vegetables to soften.
Stir in Rice
About 15–20 minutes before serving, mix in the uncooked minute rice. Let it cook in the soup until tender (check after 10 minutes and stir occasionally).
