Indulge in a moist, tropical-inspired bundt cake packed with sweet crushed pineapple and a luscious cream cheese filling. This easy pineapple cream cheese cake is perfect for summer parties, potlucks, or whenever you’re craving a slice of sunshine!

 

Ingredients

For the Pineapple Bundt Cake:

1 box (15.25 oz) yellow cake mix

1 (3.4 oz) box instant vanilla pudding mix

4 large eggs

1 cup crushed pineapple, drained

½ cup vegetable oil

½ cup sour cream

1 tsp vanilla extract

1 tsp baking powder

For the Cream Cheese Filling:

8 oz cream cheese, softened

½ cup granulated sugar

1 large egg

1 tsp vanilla extract

For the Pineapple Glaze:

1 cup powdered sugar

2–3 tbsp pineapple juice (use from the drained can)

Optional: Toasted coconut for garnish

 

Instructions

1. Preheat & Prep

Preheat your oven to 350°F (175°C). Grease and flour a Bundt pan to prevent sticking.

2. Make the Cake Batter

In a large mixing bowl, combine:

Cake mix

Instant pudding

Eggs

Crushed pineapple

Oil

Sour cream

Vanilla extract

Baking powder

Mix until smooth and fully combined. This creates a moist and fluffy pineapple cake base.

3. Prepare the Cream Cheese Filling

In a separate bowl, beat together:

Softened cream cheese

Sugar

Egg

Vanilla

Mix until creamy. This adds a rich, tangy center to the tropical cake.

4. Layer It Up

Pour half the cake batter into the pan. Gently spread the cream cheese filling on top. Finish with the remaining batter.

5. Bake

Bake for 45–55 minutes, or until a toothpick inserted comes out clean. Let the cake cool in the pan for 15 minutes, then invert onto a wire rack to cool completely.

6. Make the Glaze

Whisk powdered sugar with pineapple juice until pourable. Adjust consistency if needed.

7. Glaze & Garnish

Drizzle the glaze over the cooled cake. Sprinkle with toasted coconut for tropical flair (optional but highly recommended!).
