Creamy Garlic Chicken with Parmesan Rice & Spinach

Ingredients:

2 tablespoons olive oil

1 pound boneless, skinless chicken thighs or chicken breasts

Salt and black pepper to taste

4 garlic cloves, minced

1 cup Arborio rice or Jasmine rice

2 ½ cups chicken broth

½ cup heavy cream

½ cup grated Parmesan cheese

3 cups fresh spinach, chopped

1 teaspoon Italian seasoning

¼ teaspoon crushed red pepper flakes (optional)

Fresh parsley for garnish

Instructions:

  1. Sear the Chicken:
    In a large skillet or Dutch oven, heat olive oil over medium-high heat. Season chicken with salt and pepper. Sear on both sides for 4–5 minutes until golden and cooked through. Remove from pan and set aside.
  2. Sauté Garlic & Toast Rice:
    Lower heat to medium. Add minced garlic and sauté for about 1 minute until aromatic. Stir in rice and toast for 1–2 minutes.
  3. Cook the Rice:
    Pour in chicken broth and add Italian seasoning. Bring to a boil, then reduce to a simmer. Cover and cook for 15 minutes until rice is tender.
  4. Make it Creamy:
    Stir in heavy cream, grated Parmesan cheese, and chopped spinach. Cover and cook for 3–5 minutes until spinach is wilted and the mixture becomes creamy.
  5. Finish & Serve:
    Return chicken to the skillet. Warm through. Garnish with fresh parsley and crushed red pepper flakes if desired. Serve hot.
