    Craving a hearty, family-friendly pasta dinner with bold Italian flavors. This Slow Cooker Italian Sausage Noodle dish is loaded with juicy sausage, sweet bell peppers, and tender pappardelle noodles, all simmered together in a savory tomato and herb broth. Perfect for busy weeknights or cozy weekends!

    Ingredients:

    1 tablespoon olive oil

    1 lb Italian sausage (mild or spicy)

    1 medium onion, chopped

    4 cloves garlic, minced

    1 red bell pepper, sliced

    1 green bell pepper, sliced

    1 yellow bell pepper, sliced

    1 can (14.5 oz) diced tomatoes (with juice)

    1/2 cup extra chicken broth

    1/2 teaspoon dried oregano

    1/2 teaspoon dried basil

    1/2 teaspoon red pepper flakes (optional, for heat)

    1/2 teaspoon salt

    1/4 teaspoon black pepper

    3 cups chicken broth (plus 1/2 cup extra from above = 3½ cups total)

    8 oz pappardelle or wide egg noodles

    1/2 cup heavy cream

    Fresh basil, chopped (for garnish)

    Grated Parmesan cheese (for serving)

    Instructions:

    1. Brown the Sausage and Sauté Veggies

    Heat olive oil in a skillet over medium heat. Add sausage and cook for 5–6 minutes, breaking it into crumbles. Drain excess fat and transfer sausage to a slow cooker.
    In the same pan, sauté onion and garlic until soft (2–3 minutes). Transfer to the slow cooker.

    1. Build the Flavor Base

    Add bell peppers, diced tomatoes with juice, oregano, basil, red pepper flakes, salt, black pepper, and 3½ cups chicken broth (to replace the removed wine). Stir well to combine.

    1. Let It Cook Low and Slow

    Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the vegetables are soft and the sauce is rich.

    1. Add the Noodles

    With 30 minutes remaining, stir in the pappardelle noodles, ensuring they’re covered with liquid.
    Cover again and cook until the noodles are tender, about 25–30 minutes.

    1. Make It Creamy

    Stir in the heavy cream and let it warm through for 5 minutes.

    Serve and Enjoy:

    Dish up warm bowls of these Italian-Style Noodles, top with grated Parmesan and fresh basil, and enjoy with a side of crusty bread or salad!

    Pro Tip: For extra creaminess, stir in a bit more heavy cream or add shredded mozzarella before serving!
