Ingredients:
4 large russet potatoes
1 cup cooked chicken breast, shredded
1 cup shredded cheddar cheese
1/4 cup sour cream
2 green onions, chopped
1 tbsp olive oil
1/2 tsp garlic powder
Salt and black pepper, to taste
Instructions:
- Preheat oven to 400°F (200°C). Scrub the potatoes clean and poke each with a fork. Bake directly on the oven rack for 45–50 minutes, or until fork-tender.
- Let the potatoes cool slightly, then cut in half lengthwise. Scoop out most of the flesh, leaving a thin shell.
- Brush the inside of each potato skin with olive oil. Sprinkle with garlic powder, salt, and pepper. Place cut-side up on a baking sheet.
- Bake again for 10 minutes to make the skins nice and crispy.
- In a bowl, combine shredded chicken with half of the cheddar cheese.
- Fill each potato skin with the chicken-cheese mixture and top with the remaining cheddar.
- Bake for 10–12 minutes until cheese is melted and bubbly.
- Top each with a dollop of sour cream and a sprinkle of fresh green onions.
