Ingredients:
1 pound lean ground beef
1 medium onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
1 can (14.5 oz) diced tomatoes (with juice)
1 cup cooked white rice
1 cup shredded sharp cheddar cheese
1 teaspoon garlic powder
Salt and freshly ground black pepper, to taste
Instructions:
1. Preheat your oven to 350°F and lightly grease a 9×13-inch casserole dish.
2. In a large skillet, cook the ground beef over medium heat until fully browned. Drain off any excess grease.
3. Add the diced onion, green bell pepper, and red bell pepper to the skillet. Cook for about 5–7 minutes or until vegetables are soft.
4. Stir in the diced tomatoes, cooked rice, garlic powder, salt, and pepper. Let the mixture simmer for 5 more minutes, allowing flavors to blend.
5. Transfer the beef and pepper mixture into the prepared baking dish. Sprinkle shredded cheddar cheese evenly over the top.
