    Crock-Pot Roast & Pinto Beans

    Ingredients:

    • 2 cups raw pinto beans, rinsed
    • 1 (10 oz) can of Rotel (diced tomatoes with green chilies)
    • 1 small can chopped green chilies (optional, if you like extra heat)
    • 1 tablespoon cumin
    • 1 teaspoon garlic powder
    • 1 teaspoon chili powder
    • 1 tablespoon dried minced onion (or 1/2 fresh onion, diced)
    • 2–3 lb beef roast (chuck or similar cut)
    • Salt and pepper to taste
    • Water (enough to cover beans and halfway up the roast)

    Instructions:

    1. Place the raw pinto beans in the bottom of your crock-pot.
    2. Add the can of Rotel and green chilies. Stir to mix.
    3. Season the bean mixture with cumin, garlic powder, chili powder, and minced onion. Give it another good stir.
    4. Place the roast on top of the beans. Season the roast with the same spices.
    5. Pour in water until it just covers the beans and comes up about halfway on the roast.
    6. Cover and cook on high for 6–8 hours, or until the roast is tender and falling apart and the beans are fully cooked. Add water as needed during cooking to keep beans submerged.
    7. Once everything is cooked, reduce to low and let it simmer for another hour or two to let all the flavors marry beautifully.

    Serving Suggestions:

    • Spoon into bowls and enjoy as-is.
    • Top leftovers with a fried egg, a bit of salsa, and serve with warm tortillas for a perfect next-day breakfast!
