Slow Cooker Pepper Steak Recipe

Ingredients:
500g beef sirloin, cut into strips
1 red bell pepper and 1 green bell pepper, sliced into strips
1 large onion, thinly sliced
3 garlic cloves, minced
100ml soy sauce
250ml beef broth
2 tablespoons cornstarch (for thickening)
1/2 teaspoon black pepper
1 tablespoon sesame oil
Instructions:
1. Prep the veggies:
Slice the bell peppers and onion, and mince the garlic.
2. Brown the beef:
In a skillet over medium-high heat, heat sesame oil and sear the beef strips until browned on all sides to lock in flavor.
3. Assemble in the slow cooker:
Place the seared sirloin strips into your crockpot, then top with the peppers, onions, and garlic.
4. Make the sauce:
In a bowl, whisk together soy sauce, beef broth, and black pepper. Pour over the meat and veggies.
5. Cook low and slow:
Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the meat is fork-tender and infused with flavor.
6. Thicken the sauce:
Mix cornstarch with a splash of cold water and stir it into the crockpot during the final 30 minutes of cooking.
