    Crispy Baked Vegan Zucchini Tater Tots

     

    Crispy Baked Vegan Zucchini Tater Tots

     

    Looking for a healthy vegan appetizer or a kid-friendly veggie snack? These homemade zucchini tater tots are baked, not fried, and loaded with plant-based goodness. They’re crispy on the outside, tender on the inside, and perfect for dipping!

    Ingredients:

    2 medium zucchinis, grated

    1/2 cup breadcrumbs (use gluten-free for a GF option)

    1/4 cup nutritional yeast (adds cheesy flavor without dairy)

    2 tbsp ground flaxseed + 6 tbsp water (vegan flax egg)

    1/2 tsp garlic powder

    Salt and pepper to taste

    Olive oil spray for crisping

    Instructions:

    1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.

    2. Grate the zucchini and squeeze out all excess moisture using a clean towel or cheesecloth.

    3. In a mixing bowl, combine grated zucchini, breadcrumbs, nutritional yeast, flax egg, garlic powder, salt, and pepper. Mix well until the mixture holds together.

    4. Shape into small tot-sized pieces and arrange on the prepared baking sheet.

    5. Lightly spray with olive oil for extra crispiness.

    6. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.

    7. Serve hot with your favorite vegan dipping sauce like sriracha mayo, ketchup, or dairy-free ranch!
