Tropical Pineapple-Glazed Chicken

Ingredients:
For the Chicken:
4 boneless, skinless chicken breasts (or thighs)
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon smoked paprika
1 tablespoon avocado oil
For the Pineapple Glaze:
1 cup pineapple juice
½ cup crushed pineapple
3 tablespoons honey
2 tablespoons soy sauce (or coconut aminos for gluten-free)
1 tablespoon rice vinegar
1 teaspoon fresh ginger, grated
2 cloves garlic, minced
½ teaspoon red pepper flakes (optional, for heat)
1 teaspoon cornstarch mixed with 2 tablespoons water (slurry)
1 tablespoon unsalted butter
1 tablespoon fresh lime juice
2 tablespoons chopped green onions (for garnish)
1 tablespoon toasted sesame seeds (for garnish)
Instructions:
1. Prepare the Chicken:
Season chicken with salt, black pepper, and smoked paprika.
Heat avocado oil in a skillet over medium-high heat.
Sear chicken for 4-5 minutes per side until golden brown. Remove and set aside.
2. Make the Pineapple Glaze:
In the same skillet, add pineapple juice, crushed pineapple, honey, soy sauce, rice vinegar, ginger, garlic, and red pepper flakes.
Bring to a simmer and let cook for 5 minutes.
Stir in the cornstarch slurry and cook until the sauce thickens, about 2 minutes.
3. Glaze the Chicken:
Return the chicken to the skillet and spoon the glaze over the top.
Simmer for another 5 minutes until the chicken is fully cooked and coated in the sauce.
Stir in butter and lime juice for a silky finish.
4. Serve & Garnish:
Sprinkle with chopped green onions and toasted sesame seeds.
