Slow Cooker Pot Roast with Rich Gravy!

Ingredients:
3–4 lbs chuck roast
1 ½ lbs baby potatoes, halved
4 large carrots, peeled and cut into chunks
1 yellow onion, sliced
4 cloves garlic, minced
3 cups beef broth
2 tbsp Worcestershire sauce
2 tbsp tomato paste
1 tsp dried thyme
1 tsp dried rosemary
1 tsp salt
½ tsp black pepper
2 tbsp olive oil
3 tbsp cornstarch + 3 tbsp water (for slurry)
Fresh parsley for garnish
Instructions:
Sear the Roast:
Heat olive oil in a skillet over medium-high heat. Sear the chuck roast on both sides until browned (about 4 minutes per side) to lock in the flavor.
Prep the Crockpot:
Place the roast in the slow cooker. Arrange potatoes, carrots, onion, and garlic around it.
Mix the Flavor Base:
In a bowl, whisk together beef broth, Worcestershire sauce, tomato paste, thyme, rosemary, salt, and black pepper. Pour over the roast.
Slow Cook:
Cover and cook on LOW for 8–10 hours or HIGH for 4–5 hours until the roast is fall-apart tender.
Make the Gravy:
Remove the roast and veggies. Whisk cornstarch slurry into the cooking liquid and let it thicken for 5 minutes.
Serve and Enjoy:
Serve the pot roast with gravy drizzled on top and garnish with fresh parsley.
