    Ingredients:

    For the Filling:

    2 cups fresh spinach (or 1 cup frozen, thawed & squeezed dry)

    1 cup shredded mozzarella cheese

    ½ cup ricotta cheese (or cream cheese)

    ¼ cup grated Parmesan cheese

    1 clove garlic, minced

    ½ teaspoon salt

    ½ teaspoon black pepper

    ½ teaspoon red pepper flakes (optional for a kick)

    1 teaspoon olive oil

    For the Pastry:

    1 sheet puff pastry (thawed if frozen)

    1 egg (for egg wash)

    1 tablespoon milk (for egg wash)

    Black sesame seeds or chili flakes (for garnish, optional)

    Instructions:

    Prepare the Filling:

    1. Heat olive oil in a pan over medium heat.

    2. Add minced garlic and sauté until fragrant.

    3. Toss in the spinach and cook until wilted (if using frozen spinach, cook for about a minute).

    4. Remove from heat and let it cool slightly.

    5. Stir in mozzarella, ricotta, Parmesan, salt, black pepper, and red pepper flakes.

    Prepare the Pastry:

    1. Preheat the oven to 375°F (190°C).

    2. Roll out the puff pastry on a lightly floured surface.

    3. Spoon the spinach and cheese mixture into the center, leaving a border around the edges.

    Seal and Bake:

    1. Fold the pastry over the filling, sealing the edges with a fork.

    2. Transfer to a parchment-lined baking sheet.

    3. Whisk the egg and milk, then brush over the pastry for a golden, crispy crust.

    4. Sprinkle with sesame seeds or chili flakes for added flavor.

    Bake:

    1. Bake for 20–25 minutes or until puffed and golden brown.

    2. Let cool slightly before slicing and serving.

    Serving Suggestions:

    Pair with a side of creamy tzatziki or garlic yogurt dip.
    Serve with a crisp green salad or a bowl of tomato soup.
