Creamy Coconut Beef Curry

Ingredients:
2 lbs (900g) beef chuck or stewing beef, cut into chunks
2 tbsp vegetable oil
1 onion, finely chopped
4 garlic cloves, minced
1-inch piece of ginger, grated
1–2 tbsp curry powder
1 tsp turmeric powder
1 can (13.5 oz) coconut milk
1 cup beef stock
2 tbsp tomato paste
1 tbsp fish sauce
1 tsp sugar
2 cups chopped vegetables (carrots, potatoes, or bell peppers)
Fresh cilantro, for garnish
Steamed rice, for serving
Instructions:
Heat oil in a large skillet or Dutch oven over medium heat. Brown the beef chunks on all sides, then set aside.
In the same pan, sauté onions, garlic, and ginger until fragrant.
Stir in curry powder and turmeric, letting the spices toast for extra depth.
Add coconut milk, beef stock, tomato paste, fish sauce, and sugar, bringing everything to a simmer.
Return the beef to the skillet, cover, and cook on low heat for 1.5–2 hours, stirring occasionally.
In the last 30 minutes, add chopped vegetables and simmer until tender.
Garnish with fresh cilantro and serve with steamed rice!
