Chorizo & Halloumi Pasta

Ingredients:
8 oz pasta (penne or rigatoni)
2 tbsp olive oil
½ lb chorizo, casing removed & crumbled
1 block halloumi cheese, cubed
2 cloves garlic, minced
½ cup cherry tomatoes, halved
½ tsp smoked paprika
¼ tsp chili flakes (optional for extra heat)
Salt & pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
Cook the Pasta:
Boil pasta until al dente, drain, and set aside. Reserve some pasta water.
Sizzle the Chorizo:
Heat olive oil in a skillet over medium heat. Add crumbled chorizo and cook 5-6 minutes until crispy. Remove and set aside.
Crisp the Halloumi:
In the same pan, add cubed halloumi and cook 3-4 minutes, flipping until golden brown. Remove and set aside.
Sauté the Garlic & Tomatoes:
In the same skillet, sauté garlic for 1 minute until fragrant. Add cherry tomatoes, paprika, and chili flakes, cooking for another 2-3 minutes until softened.
Combine & Toss:
Return pasta, chorizo, and halloumi to the pan. Toss everything together, adding reserved pasta water if needed for extra creaminess. Season with salt & pepper.
Serve & Enjoy:
Garnish with fresh parsley and serve hot!
