    This Mexican Chicken with Cheese Sauce is a flavor-packed dish combining juicy, spice-rubbed chicken with a rich, creamy cheese sauce.     Ingredients:

    For the Chicken:

    4 boneless, skinless chicken breasts

    1 tablespoon olive oil

    1 teaspoon chili powder

    1 teaspoon cumin

    1/2 teaspoon garlic powder

    Salt and pepper to taste

    For the Cheese Sauce:

    2 tablespoons butter

    2 tablespoons all-purpose flour

    1 cup milk

    1 cup shredded cheddar cheese

    1/4 cup chopped green chiles

    Salt and pepper to taste

    For Garnish:

    Chopped cilantro

    Sliced jalapeños

    Diced tomatoes

    Directions:

    1. Season and Cook the Chicken:

    Rub chicken breasts with chili powder, cumin, garlic powder, salt, and pepper.

    Heat olive oil in a skillet over medium heat. Sear chicken breasts for 7–8 minutes per side until golden and cooked through. Remove from skillet and set aside.

    2. Prepare the Creamy Cheese Sauce:

    In the same skillet, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually pour in milk, whisking constantly until the sauce thickens.

    Reduce heat to low and stir in shredded cheddar cheese and green chiles. Mix until cheese is fully melted and sauce is smooth. Season with salt and pepper to taste.

    3. Assemble and Serve:

    Arrange cooked chicken on a serving plate. Generously pour cheese sauce over the chicken.

    Garnish with chopped cilantro, sliced jalapeños, and diced tomatoes for a fresh, zesty finish.
