    Mexican Fiesta Dorito Casserole

     

    This Mexican Fiesta Dorito Casserole is the ultimate comfort food, combining bold Mexican flavors with cheesy goodness and crunchy Doritos. Layers of seasoned chicken or beef, Rotel tomatoes, and gooey cheese create a hearty dish perfect for family dinners. Quick and easy to prepare, it’s a crowd-pleaser for busy weeknights or gatherings. The creamy filling and crispy topping make every bite irresistible. Serve warm and watch it disappear!

    Ingredients:

    1 bag Nacho Doritos, crushed

    2 cups shredded chicken or ground beef

    2 cups shredded cheese (or more for extra cheesiness)

    1 can (10.75 oz) cream of chicken soup

    1 can Rotel tomatoes, undrained

    1/2 cup sour cream

    1/2 cup milk

    1/2 package taco seasoning (adjust to taste)

    Instructions:

    1. Preheat the Oven: Set your oven to 350°F (175°C) and prepare a 2-quart casserole dish with nonstick spray for easy cleanup.

    2. Mix the Filling: In a large mixing bowl, combine shredded chicken or ground beef, shredded cheese, cream of chicken soup, Rotel tomatoes, sour cream, milk, and taco seasoning. Mix well until everything is evenly combined.

    3. Assemble the Layers:

    Spread half of the crushed Doritos at the bottom of the casserole dish.

    Evenly layer half of the chicken or beef mixture over the Doritos.

    Repeat with another layer of Doritos followed by the remaining meat mixture.

    4. Cheese It Up: Add an extra layer of shredded cheese on top for a gooey, melty finish.

    5. Bake to Perfection:

    Cover with aluminum foil to lock in moisture and prevent over-browning.

    Bake for 35 minutes. For larger 9×13-inch pans, increase to 45 minutes.

    6. Rest and Serve: Remove the casserole from the oven and let it rest for a few minutes. Serve warm for a hearty, cheesy meal that everyone will love!
