Ingredients:
2 tbsp butter
1 lb ground beef
1/2 lb small shells pasta
2 garlic cloves, minced
1 green bell pepper, diced
8 oz cream cheese
1/2 yellow onion, diced
6 slices provolone cheese
1 cup shredded mozzarella
1/2 cup reserved pasta water
32 oz beef stock + 32 oz water
Instructions:
Step 1: Preheat your oven to 350°F (175°C).
Step 2: Combine beef stock and water in a pot. Cook the small shells according to the package instructions. Reserve 1/2 cup of pasta water.
Step 3: In an oven-safe skillet, melt butter over medium heat. Sauté garlic for 30 seconds, then add diced green bell pepper and onion. Cook for 5 minutes until tender.
Step 4: Add ground beef to the skillet. Season with salt and pepper. Cook until browned, then drain excess grease. Return the beef to the skillet.
Step 5: Stir in cream cheese until smooth. Add the reserved pasta water, cooked shells, and shredded mozzarella. Mix well.
Step 6: Lay provolone slices on top. Bake in the preheated oven for 20–25 minutes or until the cheese is melted and bubbly.
Notes:
If you don’t have an oven-proof skillet, transfer the mixture to a greased 9×13-inch baking dish before topping with provolone and baking.
This casserole pairs wonderfully with a fresh side salad or garlic bread.
