Crock Pot Creamy Tuscan Chicken Recipe
This Crock Pot Creamy Tuscan Chicken is a rich and flavorful dish that’s perfect for busy weeknights or elegant dinners. Tender chicken breasts are slow-cooked in a creamy garlic-Parmesan sauce, complemented by sun-dried tomatoes and fresh spinach. Ingredients:
1 tbsp Olive oil
6 cloves Garlic (minced)
1 cup Heavy cream
1/3 cup Chicken broth (reduced sodium)
3/4 cup Grated Parmesan cheese
1 1/2 lb Boneless skinless chicken breasts
1 tbsp Italian seasoning
1 tsp Sea salt
1/4 tsp Black pepper
1/2 cup Sun-dried tomatoes (chopped)
2 cups Fresh spinach (chopped, packed)
Instructions:
Heat olive oil in a medium saucepan over medium heat. Add minced garlic and sauté for 1 minute until aromatic.
Pour in heavy cream and chicken broth. Bring to a gentle simmer, then reduce heat to medium-low. Let it simmer for 10 minutes, stirring occasionally, until the sauce thickens slightly.
Place chicken breasts at the bottom of your Crock Pot. Season with Italian seasoning, sea salt, and black pepper. Scatter chopped sun-dried tomatoes over the chicken.
Once the sauce thickens, lower the heat and stir in grated Parmesan cheese, adding 1/4 cup at a time. Whisk until the sauce is smooth. Adjust salt if needed.
Pour the creamy sauce over the chicken in the slow cooker, ensuring the chicken is mostly covered.
Cook on High for 3-4 hours or Low for 6-8 hours.
Once cooked, remove the chicken and set it aside. Turn the Crock Pot to High, add chopped spinach, and stir until wilted (about 2-3 minutes).
Return the chicken to the slow cooker, spooning spinach, sun-dried tomatoes, and sauce over the chicken. Serve warm with pasta, rice, or mashed potatoes.
