    Ingredients:

    1 beef brisket (3-4 pounds)

    1 tablespoon olive oil

    2 tablespoons beef rub (or your favorite spice blend)

    1 onion, chopped

    2 carrots, chopped

    2 celery stalks, chopped

    3 cups beef broth

    1 package (2 pounds) baby potatoes

    1 tablespoon olive oil

    1 teaspoon dried rosemary

    1 teaspoon dried thyme

    1/2 teaspoon salt

    1/4 teaspoon black pepper

    Directions:
