    Apple Cranberry Coleslaw

     

    Apple Cranberry Coleslaw is a vibrant mix of crunchy cabbage, sweet apples, and tangy cranberries, all tossed in a creamy, flavorful dressing. Perfect for adding a refreshing touch to any meal or gathering.

    Ingredients:

    Coleslaw:
    – 4 cups shredded cabbage (green or a mix of green and red)
    – 1 large apple, julienned (Granny Smith or Honeycrisp are ideal)
    – 1/2 cup dried cranberries
    – 1/2 cup shredded carrots
    – 1/4 cup chopped red onion
    – 1/4 cup chopped fresh parsley (optional)

    Dressing:
    – 1/2 cup mayonnaise
    – 2 tablespoons apple cider vinegar
    – 1 tablespoon honey
    – 1 tablespoon Dijon mustard
    – Salt and pepper to taste

    Directions:

    1. Prepare the Coleslaw:
    – In a large bowl, combine the shredded cabbage, julienned apple, dried cranberries, shredded carrots, chopped red onion, and chopped parsley (if using).

    2. Make the Dressing:
    – In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and pepper until smooth and well combined.

    3. Combine and Serve:
    – Pour the dressing over the coleslaw mixture.
    – Toss everything until the ingredients are well coated with the dressing.
    – Allow the coleslaw to sit for about 10 minutes to let the flavors meld. Serve chilled or at room temperature.
