Ingredients:

1 pound boneless, skinless chicken breasts

1 can (10 oz) green enchilada sauce

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon salt

1/4 teaspoon black pepper

4 cups chicken broth

1 cup shredded cheese (cheddar or Monterey Jack)

Fresh cilantro

Avocado slices

Lime wedges

 

Directions:

Prepare Chicken Place chicken breasts in the bottom of your Crock Pot.

Add Flavors Pour in green enchilada sauce, then add black beans, corn, diced tomatoes, onion, garlic, and spices.

Add Broth Stir in chicken broth until everything is combined.

Cook in Slow Cooker Cover and cook on low 6–8 hours or high 3–4 hours until chicken is tender.

Shred Chicken Remove chicken, shred with two forks, and return to the soup.

Add Cheese Stir in shredded cheese until melted and creamy.

Serve & Garnish Top with cilantro, avocado, and lime juice for fresh flavor.
