This hearty Zucchini Tomato Italian Sausage Soup is a cozy, flavorful one-pot meal loaded with fresh vegetables, savory sausage, and aromatic herbs. Perfect for weeknight dinners or meal prep, this Italian-inspired soup is wholesome, comforting, and easy to make in under an hour!

Ingredients:

1 tbsp olive oil
1 medium onion, diced
2 cloves garlic, minced
1 lb Italian sausage (mild or spicy)
2 medium zucchinis, sliced into half moons
2 cups fresh tomatoes, chopped (or 1 can diced tomatoes)
4 cups chicken broth
1 cup carrots, sliced
1 cup celery, chopped
1 tsp dried Italian seasoning
1/2 tsp red pepper flakes (optional, for heat)
Salt and black pepper, to taste
Fresh parsley or basil, for garnish

 

Directions:

Sauté the base Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 3–4 minutes. Stir in garlic and cook for another 30 seconds.

Cook the sausage Add Italian sausage, breaking it apart with a wooden spoon. Cook until browned and no longer pink.

Add veggies & seasoning Stir in zucchini, carrots, celery, tomatoes, Italian seasoning, salt, and pepper.

Cook for 5 minutes until vegetables begin to soften.

Simmer the soup Pour in chicken broth, bring to a boil, then reduce heat. Cover and simmer for 20–25 minutes, until vegetables are tender and flavors meld together.

Serve & garnish Ladle the soup into bowls, top with fresh parsley or basil, and enjoy with crusty bread or a side salad.
