Zucchini and Meat Lasagna

Ingredients:

Meat Filling
450g ground meat (beef, turkey, or a mix)
1 tbsp olive oil
1/2 finely chopped onion
2 garlic cloves, minced
1 (400g) can crushed tomatoes or tomato sauce
1 tsp dried oregano
Salt & pepper to taste
Cheese Filling
250g ricotta cheese (low-fat optional)
1 egg
1/4 cup grated Parmesan cheese
1 tbsp chopped parsley
Salt & pepper to taste
Layers
2–3 large zucchini
200g shredded mozzarella cheese

Instructions:

Wash zucchini and slice lengthwise into thin slices (~3–4 mm) using a mandoline or vegetable peeler.
Lightly salt the slices and place in a colander for 15 minutes to drain excess moisture.
Pat dry with paper towels.

Heat olive oil in a pan over medium heat. Sauté onion until translucent.
Add garlic and cook 1 minute.
Add ground meat and brown thoroughly. Drain excess fat.
Stir in crushed tomatoes, oregano, salt, and pepper. Simmer 10–15 minutes until thickened.

Mix ricotta, egg, Parmesan, parsley, salt, and pepper in a bowl. Set aside.

Preheat oven to 180°C (350°F) and grease a baking dish.
Spread a thin layer of meat sauce on the bottom.
Layer zucchini slices (slightly overlapping).
Spread half of the ricotta mixture over zucchini.
Add remaining meat sauce.
Repeat: zucchini → ricotta → meat sauce.
Top with shredded mozzarella cheese.

Cover with foil and bake 30 minutes.
Remove foil and bake an additional 10–15 minutes until cheese is golden and bubbly.

Let lasagna rest 10 minutes before cutting to ensure perfect slices.
