    Zucchini and Goat Cheese Potato Roll

     

    The Potato, Zucchini, and Goat Cheese Roll is a savory, cheesy delight perfect for vegetarians and cheese lovers alike. This recipe combines grated potatoes, zucchini, fresh goat cheese, and herbs to create a flavorful and wholesome dish. It’s baked to golden perfection, rolled, and baked again for a creamy, melty finish. Ideal as a main dish or appetizer, it pairs beautifully with salads or grilled vegetables. Quick, easy, and packed with nutrients, it’s a must-try comfort food for any occasion!

    Ingredients:

    1 lb (500g) potatoes

    1 zucchini

    5 oz (150g) fresh goat cheese

    3 eggs

    3.5 oz (100g) shredded cheese (emmental or gruyère)

    1 garlic clove, finely chopped

    Fresh herbs (parsley, chives, thyme)

    2 tbsp olive oil

    Salt and pepper, to taste

    Instructions:

    Step 1: Prepare the Vegetables

    1. Preheat your oven to 350°F (180°C).

    2. Peel and finely grate the potatoes and zucchini. Combine in a large mixing bowl.

    Step 2: Create the Roll Base

    1. Add eggs, shredded cheese, chopped garlic, fresh herbs, salt, and pepper to the grated vegetables. Mix thoroughly.

    2. Spread this mixture evenly onto a parchment-lined baking sheet, forming a flat rectangle.

    Step 3: Bake the Base

    1. Bake for 25-30 minutes or until the top is lightly golden.

    Step 4: Add the Goat Cheese

    1. Remove the base from the oven and spread fresh goat cheese evenly across the surface.

    2. Using the parchment paper, carefully roll the mixture into a tight roll.

    Step 5: Final Bake

    1. Return the roll to the oven and bake for an additional 10 minutes, allowing the goat cheese to melt and flavors to meld.

    Step 6: Serve and Enjoy

    1. Slice the roll into pieces and serve hot with a side of fresh green salad or grilled vegetables for a perfect pairing.
