Bring a fresh, crunchy twist to sandwiches, burgers, or crackers with this easy and flavorful Zucchini Relish! Perfect for summer harvests, it’s simple, wholesome, and naturally colorful.

Ingredients:

4 cups grated zucchini (about 2 medium zucchinis)

1 cup grated onion (about 1 medium onion)

1 cup grated carrot (about 1 medium carrot)

1 cup finely chopped bell pepper (any color)

1 tablespoon salt

Instructions:

1. Prep the Vegetables: Wash and grate the zucchini, onion, and carrot. Finely chop the bell pepper.

2. Combine & Salt: In a large bowl, mix all the vegetables together. Sprinkle with salt and toss well.

3. Let it Sit: Allow the mixture to sit for 1–2 hours to release excess moisture.

4. Optional: Drain excess liquid if you prefer a thicker relish.

5. Serve & Store: Enjoy fresh on sandwiches, burgers, or crackers. Store leftovers in an airtight container in the fridge for up to a week.
