    Zesty Shrimp and Avocado Rice Bowls with Creamy Cilantro Lime Sauce

    A refreshing, protein-packed shrimp rice bowl loaded with bold flavors! Perfect for a quick and easy lunch or dinner. This healthy seafood recipe is bursting with zesty spices, creamy avocado, and a tangy cilantro lime sauce.

     

    Ingredients for Shrimp Rice Bowls:

    1 pound large shrimp, peeled and deveined

    1 tablespoon olive oil

    1 teaspoon chili powder

    ½ teaspoon ground cumin

    ¼ teaspoon garlic powder

    Salt and black pepper, to taste

    2 cups cooked rice (white or brown rice)

    1 ripe avocado, diced

    ½ cup cherry tomatoes, halved

    ¼ cup red onion, thinly sliced

    ¼ cup fresh cilantro, chopped

     

    Ingredients for Creamy Cilantro Lime Sauce:

    ½ cup sour cream or plain Greek yogurt

    ¼ cup fresh cilantro, chopped

    2 tablespoons fresh lime juice

    1 tablespoon water

    ¼ teaspoon salt

    Pinch of black pepper

     

    Instructions:

    1. Season the Shrimp: In a mixing bowl, toss the shrimp with olive oil, chili powder, cumin, garlic powder, salt, and black pepper until well coated.

    2. Cook the Shrimp: Heat a large skillet over medium-high heat. Cook shrimp for 2-3 minutes per side, or until pink and fully cooked. Remove from heat.

    3. Prepare Cilantro Lime Sauce: In a small bowl, whisk together sour cream (or Greek yogurt), chopped cilantro, lime juice, water, salt, and pepper until smooth and creamy.

    4. Assemble the Rice Bowls: Divide the cooked rice evenly among four bowls. Top with shrimp, diced avocado, cherry tomatoes, red onion, and fresh cilantro.

    5. Finish with Sauce: Generously drizzle the cilantro lime sauce over each bowl.

    6. Serve: Enjoy immediately for a satisfying, zesty shrimp and avocado rice bowl experience!
