White Chocolate Strawberry Cheesecake Bites

Ingredients:
For the Crust Base:
1 cup crushed graham crackers
3 tbsp unsalted butter, melted
For the Creamy Cheesecake Filling:
1 package (8 oz) cream cheese, softened
1/4 cup granulated sugar
1/2 tsp vanilla extract
1/2 cup white chocolate chips, melted
1/2 cup fresh strawberries, finely chopped
Optional Garnish:
Fresh strawberry slices
Melted white chocolate drizzle
Instructions:
Make the Crust Base:
In a bowl, mix crushed graham crackers with melted butter until the mixture resembles wet sand. Press firmly into the bottom of a silicone mini muffin pan to form a base.
Prepare the Cheesecake Filling:
Beat cream cheese, sugar, and vanilla extract until smooth. Fold in the melted white chocolate until well combined. Gently stir in the chopped strawberries.
Assemble & Chill:
Spoon the cheesecake mixture over the prepared crusts. Fill each cup to the top. Refrigerate for at least 2 hours until firm and set.
Garnish & Serve:
Pop each bite out of the pan. Garnish with a fresh strawberry slice and drizzle with extra white chocolate. Serve chilled and enjoy!
