Walking Taco Casserole
This Walking Taco Casserole is a quick and easy meal that’s perfect for Taco Tuesday! Layered with ground beef, Fritos, and melty cheese, it’s topped with fresh veggies and salsa for a delicious, crowd-pleasing dish.
Ingredients:
– 1 1⁄2 pounds ground beef
– 1⁄3 large onion, chopped
– 1 can green chilies (small)
– 1 can enchilada sauce
– 2 ounces cream cheese
– 1 bag Fritos corn chips
– 1 bag shredded cheese
– 3⁄4 cup lettuce, shredded
– 1⁄2 cup fresh tomatoes, diced
– 16 ounces salsa
– 8 ounces sour cream
Directions:
1. Preheat your oven to 350°F.
2. In a skillet, brown the ground beef with the chopped onion until fully cooked.
3. Add the green chilies, enchilada sauce, and cream cheese to the skillet, stirring until well combined.
4. In a 9×13 baking dish, layer as follows: Fritos corn chips, meat mixture, shredded cheese.
5. Bake in the preheated oven for 15-20 minutes or until the cheese is bubbly and melted.
6. Serve individual portions topped with shredded lettuce, diced tomatoes, salsa, and sour cream as desired.
