Voodoo Egg Rolls

Ingredients:
1 cup cooked crawfish tails or shrimp, chopped (perfect for seafood lovers)
1/2 cup andouille sausage, finely diced (adds a smoky Cajun kick)
1/2 cup shredded cheddar cheese
1/4 cup diced red bell pepper
1/4 cup diced red onion
1/2 cup cooked rice (great use for leftovers!)
1 tbsp Cajun seasoning (adds bold Southern flavor)
1 tbsp chopped fresh parsley
6–8 egg roll wrappers
Water (for sealing edges)
Vegetable oil (for deep frying)
Cheese sauce or spicy ranch (for dipping)
Instructions:
1. In a large mixing bowl, combine the crawfish or shrimp, andouille sausage, cheddar cheese, bell pepper, red onion, rice, Cajun seasoning, and parsley. Mix well to evenly distribute the flavors.
2. Lay an egg roll wrapper on a clean surface. Spoon 2–3 tablespoons of filling into the center.
3. Fold the bottom corner over the filling, roll halfway, fold in the sides, and finish rolling tightly. Seal the edge with water.
4. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
5. Fry egg rolls in batches until crispy and golden brown, about 3–4 minutes each. Drain on paper towels.
6. Serve hot with your choice of cheese sauce or spicy ranch dressing
