    Vibrant Coconut Curry Dumpling Soup

    A flavor-packed, soul-warming one-pot meal featuring tender dumplings in a creamy coconut curry broth loaded with veggies! This vegan comfort food is perfect for cozy nights or when you’re craving something Asian-inspired and satisfying.

     

    Ingredients:

    1 tbsp coconut oil

    1 onion, finely chopped

    3 cloves garlic, minced

    1 tbsp fresh ginger, grated

    2 tbsp red curry paste

    1 tsp turmeric powder

    4 cups vegetable broth

    1 (14 oz) can coconut milk

    1 tbsp soy sauce or tamari

    1 tsp brown sugar

    1 cup baby carrots, sliced

    1 red bell pepper, thinly sliced

    1 cup snow peas

    12–16 vegetable dumplings (store-bought or homemade gyoza/wontons)

    1 tbsp lime juice

    Fresh cilantro, for garnish

    Sliced red chili (optional), for garnish

     

    Instructions:

    1. Heat coconut oil in a large pot over medium heat. Sauté chopped onion for 3–4 minutes until translucent.

    2. Add garlic and ginger; cook for 1–2 minutes until aromatic.

    3. Stir in red curry paste and turmeric. Cook for 1 minute, stirring constantly.

    4. Pour in vegetable broth and coconut milk. Mix well.

    5. Add soy sauce and brown sugar. Bring the soup to a gentle simmer.

    6. Add carrots and red bell pepper. Simmer for 5 minutes until slightly tender.

    7. Gently drop in dumplings. Cook for 5–7 minutes or until heated through and tender.

    8. Stir in snow peas and lime juice. Simmer 1–2 more minutes.

    9. Taste and adjust seasonings.

    10. Serve hot, garnished with fresh cilantro and red chili slices if desired.
