    Vegetarian Slow Cooker Lasagna Recipe

     

    Vegetarian Slow Cooker Lasagna Recipe

     

    This Vegetarian Slow Cooker Lasagna is a delicious, meat-free dish perfect for any occasion. Layers of ricotta cheese, fresh spinach, and mozzarella create a creamy and flavorful meal. The slow cooking method ensures tender lasagna sheets and rich tomato sauce. Packed with healthy spinach and walnuts, this recipe is both nutritious and indulgent. Ideal for busy weeknights or meal prep, it’s a family favorite that everyone will enjoy!

     

    Ingredients:

    For the Spinach Layer:

    450 g Fresh spinach

    500 g Ricotta cheese

    100 g Walnuts, roughly chopped

    Sea salt and freshly ground black pepper

    For the Tomato Layer:

    500 g Passata

    1 tsp Garlic granules

    3 tbsp Pesto

    3 tbsp Tomato purée

    Sea salt and freshly ground black pepper

    To Layer:

    250 g Dry lasagna sheets

    200 g Grated mozzarella

     

    Instructions:

    1. Prep the Spinach Layer:

    Place the spinach in a large bowl and cover it with boiling water. Let it soak for 10 minutes.

    Meanwhile, mix the tomato layer ingredients in a jug and set aside.

    Drain the spinach thoroughly, using a colander. Squeeze out as much water as possible (once it cools slightly, use your hands for better results).

    Finely chop the drained spinach and combine it with ricotta, walnuts, salt, and pepper.

     

    2. Assemble the Lasagna:

    In your slow cooker, spread one-third of the spinach mixture.

    Add a layer of lasagna sheets, ensuring they cover the spinach evenly.

    Pour one-third of the tomato mixture and sprinkle one-third of the mozzarella.

    Repeat this process twice, creating three layers in total.

     

    3. Cook:

    Place a clean tea towel over the slow cooker to absorb excess moisture. Secure the lid on top.

    Cook on HIGH for 2-3 hours or LOW for 5-6 hours, until the pasta is tender and fully cooked.

     

    Tips for Perfect Lasagna

    Avoid Soggy Layers:

    Soak fresh spinach in boiling water for 10 minutes. Drain and squeeze out all excess moisture.

    If using frozen spinach, defrost and remove excess water as per package instructions.

    Customize: Add your favorite veggies like zucchini or mushrooms for extra flavor.
