    Vegan Luscious Cream Cheesecake

    Vegan Luscious Cream Cheesecake

    This creamy, dairy-free cheesecake is the ultimate indulgent vegan dessert rich, smooth, and bursting with flavor! Made with a nutty cashew filling, a crunchy graham cracker crust, and topped with fresh berries, this is a no-bake treat you’ll love. Perfect for summer gatherings, special occasions, or a guilt-free sweet craving!

     

    Ingredients:

    For the Crust:

    1.5 cups vegan graham cracker crumbs (or crushed vegan cookies)
    1/4 cup melted coconut oil
    2 tablespoons maple syrup

    For the Cheesecake Filling:

    2 cups raw cashews, soaked in water for 4-6 hours or overnight, then drained
    1/2 cup coconut cream (solid part from a chilled can of full-fat coconut milk)
    1/2 cup lemon juice
    1/2 cup maple syrup
    1/4 cup melted coconut oil
    1 teaspoon vanilla extract
    Pinch of salt

     

    For the Topping:

    Fresh berries or fruit of your choice
    Vegan whipped cream (optional)

     

    Instructions:

    Prepare the Crust

    1. In a bowl, mix vegan graham cracker crumbs, melted coconut oil, and maple syrup until combined.

    2. Press the mixture firmly into the bottom of a 9-inch springform pan, forming an even crust.

    3. Place in the freezer while preparing the filling.

     

    Make the Cheesecake Filling

    1. In a high-speed blender or food processor, combine soaked cashews, coconut cream, lemon juice, maple syrup, melted coconut oil, vanilla extract, and a pinch of salt.

    2. Blend on high until the mixture is smooth and creamy, scraping the sides as needed.

     

    Assemble the Cheesecake

    1. Pour the cheesecake filling over the prepared crust in the pan.

    2. Smooth the top with a spatula.

     

    Set & Chill

    1. Cover the springform pan with plastic wrap.

    2. Place in the refrigerator for at least 4-6 hours (preferably overnight) until firm.

     

    Decorate & Serve

    1. Carefully remove the cheesecake from the springform pan and place on a serving platter.

    2. Top with fresh berries or your favorite vegan toppings.

    3. For an extra touch, add a swirl of vegan whipped cream.

    4. Slice and enjoy this refreshing, creamy vegan cheesecake!
