Ultimate Slow Cooker Beef Stew
Warm up with this rich, chunky, and ultra-tender beef stew! Made in the crockpot, this one-pot meal is packed with juicy beef, hearty potatoes, sweet carrots, and savory seasonings the perfect comfort food for chilly days!
Ingredients:
1 ½ lbs potatoes, peeled & cubed
6 medium carrots, cut into 1-inch pieces
1 medium onion, coarsely chopped
3 celery ribs, chopped
3 tbsp all-purpose flour
1 ½ lbs beef stew meat, cut into 1-inch cubes
3 tbsp canola oil
1 (14.5 oz) can diced tomatoes, undrained
1 (14.5 oz) can beef broth
1 tsp ground mustard
½ tsp salt
½ tsp black pepper
½ tsp dried thyme
½ tsp browning sauce (optional)
Minced fresh thyme (for garnish, optional)
Directions:
Layer the veggies: Place potatoes, carrots, onion, and celery in a 5-quart slow cooker.
Coat the beef: In a shallow dish, toss stew meat with flour to coat evenly.
Sear for flavor: Heat oil in a large skillet over medium-high heat. Brown the floured beef cubes in batches. Add to slow cooker.
