Ingredients:
For the Healthy Stir-Fry
500 g (1.1 lbs) boneless skinless chicken breast, cut into small pieces
1 cup broccoli florets
1 cup fresh green beans, trimmed
½ red bell pepper, sliced
½ yellow bell pepper, sliced
2 tbsp vegetable oil
2 cloves garlic, minced
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp honey (or maple syrup)
1 tsp sesame oil
Salt and black pepper to taste
For the Mixed Rice
1½ cups cooked mixed rice (brown rice, wild rice & white rice blend)
Pinch of salt
Instructions:
1. Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat.
2. Add the chicken breast pieces and cook until golden and fully cooked. Remove and set aside.
3. In the same skillet, add the remaining 1 tbsp oil and sauté the minced garlic for about 30 seconds.
4. Add the broccoli, green beans, and sliced bell peppers. Stir-fry for 3–4 minutes until vegetables are crisp-tender.
5. Return the cooked chicken to the pan. Add soy sauce, oyster sauce, honey, sesame oil, salt, and pepper.
6. Stir everything together and cook for another 2 minutes so the flavors meld.
7. Serve hot over a bed of warm mixed rice.
