Ingredients:

– 2 pounds potatoes, peeled and cubed
– 1 cup mayonnaise
– 1 tablespoon Dijon mustard
– 1/4 cup chopped dill pickles
– 1/4 cup chopped red onion
– 2 hard-boiled eggs, chopped
– Salt and pepper to taste
– Fresh dill (optional, for garnish)

Instructions:

1. Cook Potatoes: In a large pot, cover the cubed potatoes with water and bring to a boil. Cook for 10-15 minutes until tender. Drain and allow to cool.
